Satsivi
Origin
Satsivi is a sauce or paste made of walnuts ground with water and seasonings. The texture of the paste is determined by the amount of water. More water makes for a pourable sauce while less is used to make a thicker dip-like sauce. The word satsivi comes from the Georgian word for cold, and accordingly, the sauce is served cold.
The name satsivi can also refer to an entire dish containing the sauce, for example chicken satsivi. Satsivi is a traditional New Year and Christmas dish in Georgia.
