Truffles prices double due to severe shortage
The price of white truffles, one of fine dining’s most precious ingredients is sending prices spiraling upwards. In some regions, supplies of the precious tuber could be reduced by 90 percent due to the warm summer and dry autumn.
Bloomberg reports that the price of the precious tubers has grown to US$2,800 to US$3,200 a pound. Restaurants are eating most of the price increase, but it seems inevitable that those who want some fresh white truffle on their dishes will have to pay more.
